Mixed Veggie Summertime Soup Recipe
Freshly delicious mixed veggie soup. My preferred summertime meals are light and mostly made of seasonal veggies.
I always like cooking spontaneously with all kinds of veggies I have in my fridge.
This one came out super delicious and hope many will give it a try and love it.

Ingredients
1 medium onion, finely chopped
2-3 tbs olive oil
1 cup fresh or canned tomato sauce or salsa
1 tbs red pepper paste
2 garlic cloves, minced
3 sticks of celery, finely chopped
½ lbs broccoli florets
2 medium size red potatoes, cubed
Half bell pepper, sliced
1 medium carrot, sliced
Freshly chopped herbs, parsley or cilantro
Salt, black and red pepper, cumin, curry to taste
Directions
Sauté onions until translucent
Add in all veggies except for broccoli
Cook 3-4 minutes , stir occasionally to prevent sticking
Mix in tomato sauce and red pepper paste, cook for a minute
Add boiling water , cover the lid halfway and cook 7-10 minutes or until potatoes are cooked
Add broccoli, fresh herbs , spice and season
Cook 1-2 minutes , turnoff the heat and allow to set 10 minutes
Enjoy with a squeeze of lemon juice
