Nutella Meringue Cookies
First post of 2016 had to be something sweet , and these Nutella meringue cookies turned out to be the one. Plus what’s sweeter than meringues? I wrote the recipe on a quick hand as making meringues is one of my favorite things,and I perfected my skills by making them quite often, I have quite a few sweet tooth little people at home:)
As for the Nutella cream cheese frosting, I’ve made it quite a few times for my cheesecakes, nothing new here.I knew that combining these two together would make a perfect dessert .

Ingredients
For the meringues
4 egg whites, at room temperature
1 cup granulated white sugar
¼ tsp cream of tartar ( or 1 tsp lemon juice, pinch of salt)
1 tsp vanilla extract
For the Nutella cream
8 oz (1 pack) cream cheese, at room temperature
½ cup powdered sugar, sifted
½ tsp vanilla extract
¼ cup heavy whipping cream
¾ cup Nutella
1 tbs hazelnut liqueur, optional
Directions
Making the meringue
Be sure to clean the mixing bowl and whisk attachment very well,I use a tablespoon of vinegar and paper towel to wipe
Whisk the egg white until foamy
Add cream of tartar and start adding the sugar 1 tbs at a time
Scrape the bowl after last addition of sugar
Add vanilla extract and a pinch of salt
Whisk as long as it needs to absorb all the sugar granules , use your fingertips to check
Pipe meringues on a lined baking sheet about 3” diam, 2” apart , you should have about 24 of them
Optionally sprinkle with crushed hazelnuts or cocoa powder
Bake at 220°F about 1 ½ hours
Turn off the oven, slightly open the door and allow to cool down inside the oven another hour
Making the Nutella cream
Whip the cream cheese, vanilla extract and powdered sugar on high speed until incorporated
Lower the speed and slowly add the whipping cream, then Nutella and liquor
Beat all together 2-3 minutes and start frosting the cooled meringues
I use a piping bag with a star tip, you can use a regular offset spatula
