Pickled Pigs Feet Recipe
Not all foods look very appetizing or attractive, some even have a name that may sound weird, such as : pickled pigs feet… Yes, it’s something they’d eat and want more or get very addicted to. Well , Ok those feet may not be very addictive, but trust me those pickled pigs feet are worth a try. Back in Armenia, this dish was made only once a year as it was quite time consuming. Pigs feet would come directly from farms, all covered in fur. It would take long time to clean and prep them for cooking. Normally they’d pickle those in big portions, as any other wintertime food, just as they’d pickle big gallons of veggies, make cured meats etc.
Pickled pigs feet are served as side dish, nothing to fulfill the hunger, rather manch on over long conversations by dinner table, along with a glass of wine or matchar ( sweet young wine, don’t know the English translation for the word ). At least that’s how my father, uncles and grandfather would enjoy the mojoj ( pickled pigs feet).
I won’t be posting an exact recipe, but rather quick instructions , as this is a dish you’d make to your needs. All you need to know is the proportions for: water, salt and vinegar.

Quick instructions & ingredients for making Pickled Pigs Feet
You will need:
*Cleaned, cut pigs feet
*Water
*Salt
*Bayleaves
*Black pepper seeds
*Garlic
*Vinegar
Optionally
You can add
Carrots
Celery
Colored bell peppers
Vegetable oil
Instructions
Wash the meat thoroughly with cold water
Place in a bowl with cold water , about 1-2 hours
Change the water every once in a while as it turns foggy or not clear
As the water clears you can cook the meat
In a large pot bring to a boil, as it starts to form that foamy layer, discard the water and wash the meat under running water
Cook again with freshly added hot or warm water, this time season the water with: salt, bay leaves and black pepper seeds
Cook about 45-60 minutes , or as long as it needs to become tender
Cut a piece with a knife to check how well it’s cooked
Allow to cool down and very carefully and and remove any fur that you can find on those meats (feet) , refer to YouTube tutorial video for more details
Clean and slice: garlic,carrots, celery, pepper
To prep the brine: mix water, salt and vinegar, in following proportions: to 8 cups of water add ¼ cup salt, ½ cup vinegar
Arrange the cleaned meat in a large glass jar or pot
Add a few bay leaves , black pepper seeds, garlic and other sliced veggies
Add the brine and leave in cool place 8-10 hours, then transfer to fridge and save it in fridge as long as you need
