Quinoa Tabouli Salad Easy Recipe
Ingredients
1 Cup cooked quinoa
2-3 Fresh tomatoes (cubed)
¾ Cup finely chopped parsley
⅔ Cup finely chopped scallions
1 Lemon zest & juice
3-4 Tbs olive oil
1/2 Tsp Ground black pepper
1 Tsp Sea salt
1 Tsp paprika
¼ Tsp cayenne or aleppo pepper (optional for spiciness )
1 Cup fresh arugula
1 Fresh green pepper chopped
Directions
Cook one cup of quinoa with 1 ½ cup of water about 10-12 minutes,or until all the water is simmered
Let it cool down and add the rest of your ingredients.
