Roasted Chickpeas Cabbage Salad Recipe
This simple roasted chickpeas cabbage salad can be made without looking at a recipe.
I’ll put down quick list of ingredients and hope many will try and love it!
Ingredients
A can of chickpeas, drained the water and rinse
Spices; such as curry, cumin, garlic powder , turmeric, red and black pepper
Olive oil
Fresh bell pepper to be spiced and roasted with chickpeas
Roast at 450°-480°F degrees 10-15 minutes or until slightly golden color
Red and green cabbage , cut
Brussel sprouts , cut into quarters
Napa cabbage , cut
Red or brown onions , sliced into semi circles
2 carrots, shredded
Fresh Parsley , dill and cilantro, chopped
Olive oil
Lemon or lime juice
Salt and black pepper to taste
Directions
Start by spicing and roasting chickpeas and bell peppers
Simply spice season, drizzle with olive oil , spread on a baking sheet and roast 10-15 minutes or until roasted
Next step
In a large bowl combine all your cut and chopped veggies , herbs and toss
As the chickpeas and bell peppers are out of the oven, spice and season veggies and toss to incorporate
Top with roasted chickpeas and bell peppers , enjoy
