No Bake Salted Caramel Cake
When two delicious sweets collide :salted caramel cake happens:)
And what’s the best part : it’s a no bake and very easy to make . Recently I uploaded a YouTube tutorial on how to make wafer rolls. As I was making those thin and crispy layers an idea to make a wafer cake came to my mind. I had some leftover caramel sauce sitting in the fridge , thought to to try combining wafer and caramel, loved the result so much that decided to share with you as well. I posted the picture of this salted caramel cake on my Instagram and Facebook pages, many got interested in the recipe, so here it comes.

Ingredients
For wafer rolls
You will need a flat iron wafer maker ( the same you’d use to make ice cream cones)
4 large ( or xlarge) eggs, at room temperature
½ cup sugar
½ cup heavy cream (or milk)
1 tsp vanilla extract
½ tsp baking powder
¾ cup flour
¼ tsp salt
For caramel
110 gram (1 stick) of unsalted butter
1 1/2 cups of granulated white sugar
1 tbs corn syrup (optional)
2 tsp salt (or more or less to your taste)
1 1/2 tsp vanilla extract
2/3 cup heavy cream (Preheat in microwave about a minute, do not boil)
You will need a candy thermometer
For chocolate ganache
⅓ cup semisweet chocolate chips
2 tbs heavy whipping cream
1 tbs unsalted butter
Directions
To make the wafer layers
In a bowl combine combine dry ingredients:flour, salt, baking powder and set aside
Beat the eggs and sugar until pale and fluffy
Add the cream,vanilla extract and dry ingredients
Mix for 1-2 minutes, wafer batter is ready
Preheat the wafer maker
Add about a tablespoon of batter and cook until bright golden color, may take 1-3 minutes, depending on your wafer maker
Place the ready wafer of a flat surface and allow to cool down
To make caramel
Place the butter, sugar, salt, and corn syrup in heavy bottom saucepan
Cook over medium heat, stirring occasionally with wooden spoon
As the mixture starts to bubble, clip the candy thermometer and continue cooking until the thermometer reaches to 310°F
Note* be careful not to burn the sugar syrup, watch carefully when it turns a dark amber color. Remove from the heat and stir in vanilla extract
Slowly pour the cream and continue stirring until all the cream is used
To make the ganache
Simply melt all the ingredients in microwave or over double boiler
Set aside to cool down slightly before using
Assembling the cake
Spread a thin layer (a tablespoon or more) on each wafer layer and stock up on top of each other until all the caramel is used, press slightly to stick them together, if layers brake that’s ok
Pour the ready ganache over and decorate to your taste, refer to YouTube tutorial for more details
Allow the ready cake to set in the fridge 25-30 minutes before slicing
