Armenian Shortbread Cookies – Shaqar lokhum


Shortbread Cookies

My version for the Armenian shortbread cookies called Shaqar Lokhum/ Շաքար Լոխում. These shortbread cookies are very tender,crumbly, buttery, simply irresistible .The most perfect company for tea or coffee.

Armenian shortbread cookies

Ingredients

Armenian shortbread cookies

150 grams (1 ½ stick ) unsalted soft butter,use good quality butter for better taste

1 ½ cups ( powdered ) confectioners sugar , plus extra for dusting the cookies

¼ cup heavy whipping cream

2 tsp baking powder

1 tbs cornstarch

¼ tsp salt

1 ⅔ cups all purpose flour

Directions for Shortbread Cookies

Preheat the oven to 370°F

In a large bowl sift together: flour,baking powder,salt and cornstarch, set aside

In a mixing bowl beat the butter a few minutes until pale color

Add confectioners sugar and beat on low speed a few minutes,then on high speed for 5-7 minutes or until it’s light and fluffy, almost white color

Lower the speed and beat in the cream and dry ingredients in a few additions

Using a medium or small size ice cream scoop shape the cookies into round balls

Lightly tap with your fingers to flatten

Using a fork make a few marks to give a design

Bake on a nonstick cookie sheet 12-15 minutes

Allow the cookies to cool down, dust with confectioners sugar and enjoy!
