Raspberry Smores Cake
Very typical American snack called smores cake, except with my little twist that turned one yummy sweet into a gorgeous looking dessert: smores cake or s’mores tart. It’s just a simple result of my various experiments.I’m happy to share the recipe and hope that many would give it a try and leave me comments on how they liked it. It’s pretty simple and quick in making,plus it tastes unbelievably good.

Ingredients
1 ⅔ cups of crushed graham crackers
50 grams melted butter ,plus a bit extra to grease the pan
½ tsp cinnamon (optional)
150 grams semisweet chocolate
200 grams milk chocolate (or use 350 grams of either kind)
2-3 cups of mini marshmallows (or use jumbo kind as many as you need to cover the chocolate layer)
¼ cup coconut flakes (sweetened or unsweetened )
Raspberries and chocolate shavings to decorate the cake (optional)
You will also need an 8” round spring form baking pan
Directions
Preheat the oven to 400° F/200° C degrees
Start melting the chocolate on a double boiler until it’s smooth, without lumps,set aside
In a food processor combine graham crackers, butter and cinnamon, pulse a few seconds
Generously butter the pan, pour in the graham crackers mixture
Using a measuring cup or hands, tap and smooth out the mixture
Pour the melted chocolate over
Cover with marshmallows, sprinkle coconut flakes
Bake 10-12 minutes or until marshmallows turn brown color
Remove from the oven and place the pan on a cooling rack
Place in the fridge for 35-45 minutes
Pass a greased knife around the sides to ease out the cake from the pan
Decorate with raspberries and chocolate shavings ,or at your taste
Tip:Use a greased knife to slice the cake, to avoid the marshmallow sticking to it
