Stuffed Avocado
Just a quick appetizer idea :stuffed avocado sushi salad . This simple appetizer can be make within a few minutes on quick hand, and served with stir fried veggies as a side dish or garnish. I would suggest to make these stuffed avocados a few minutes prior to serving,as a dish like this can loose its fresh look very quickly. Because this is a sushi related appetizer, feel free to use any of your favorite sushi ingredient to top the final dish with or even mix in with the crabmeat mayo filling .
Depending on the quantity you need, double or triple the recipe , this recipe with serve 2-3 people.
Ingredients
3 avocados
⅔ cup finely chopped imitation or real crab meat
1 tbs mayo
3 branches of scallions ,chopped finely
½ cup calrose ( sushi) rice , cooked
1 tbs toasted sesame seeds
½ sheet of sushi nori , cut into small strips
Additionally you will need pickled ginger, soy and teriyaki sauces ,and any other sushi condiments to your preference
Directions
Cook the rice and allow to cool down while you prepare the rest
Cut the crab meat finely and mix with mayo and scallions, set aside
Slice avocados in half and remove the seeds
Using a large tablespoon gently scoop out avocados from their skins
Place a teaspoonful of rice inside the avocado,gently press,then top it with a tablespoon of the crab filling
Arrange stuffed avocados on your serving dish
Sprinkle with sesame seeds, nori strips
Leftover rice can be shaped as little balls, using a small ice cream scoop
Garnish the plate to your taste and serve fresh
