Swiss Chard Pumpkin Dish Recipe
Quickly made up, delicious Swiss chard pumpkin dish. I call this kind of cooking: improvised cooking, which is basically my everyday cooking style. I don’t like wasting good food, especially veggies. So, I bought Swiss chard to make a tutorial for my recent recipe : “pumpkin and bulgur stuffed chard leaves”.
It’s a great recipe, but a bit time taking. And you know, how quickly fresh veggies can go bad if not used on time. And who would let that goodness to go to waste? Right, no one, therefore I decided to make something quickly and, why not, also film and share,

Ingredients
3 bunches fresh Swiss chard
13-16 oz pumpkin, cubed ( I sliced it, since it was a young pumpkin)
5-7 mini bell peppers, cut into halve
3-4 tbs olive oil
1 large or 2 small onions, sliced to semicircles
2-3 clove of garlic minced
⅓ cup bulgur (#1 grind ) + ⅓ cup hot water
2 fresh tomatoes, peeled cubed
2-3 tbs fresh parsley
Salt and pepper to taste
Directions
Start by cooking the Swiss chard
Boil a pot of water, first cut and add the stems, then after it starts to boil and cook about 3-4 minutes, add coarsely chopped leaves and cook another 2 minutes
Place the cooked Swiss chard on a strained and set aside
Wet the bulgur with hot water and set aside, as well
Sauté onions and peppers with olive oil, about 4-5 minutes
Add pumpkin , salt pepper, cover the lid and cook 3-5 minutes, or until the pumpkin is tender
Add tomatoes, Swiss chard, garlic , bulgur and salt
Toss and cook everything a few more minutes
Add freshly chopped parsley or cilantro , or both
Swiss Chard Pumpkin Dish is ready!
Serve with plain yogurt or fresh lemon juice
