Swiss Roll Recipe with Jam
Simple, classic Swiss roll that for many of us may be another sweet reminder of childhood . I personally prefer Swiss roll with jam, especially with apricot jam, but would also suggest to try it with grape jelly, I’m sure for many this will be new and become favorite kind of Swiss roll spread.

Ingredients
5 eggs, at room temperature
¾ cup granulated sugar
1 tsp vanilla extract
⅔ cup flour
⅓ cup cornstarch
¼ tsp salt
½ tsp baking powder
1 cup jam, use any of your favorite jams ( I used two kinds and made different rolls, refer to YouTube tutorial for more details)
You will also need:
*Half sheet baking pan lined with parchment or wax paper
*Cooling rack and with wax paper
*2-3 tbs confectioners sugar for dusting the Swiss roll
Directions
Preheat the oven to 350°F/180°C degrees
Prepare baking pan: line with parchment paper, drizzle with baking spray
In a bowl combine dry ingredients: flour, cornstarch and salt, sift and set aside
In a mixing bowl combine eggs, sugar and vanilla extract
Whisk on high speed until fluffy and pale color, almost tripled in size
Start adding the dry ingredients by sifting a little bit at a time and folding with spatula
Take time with mixing and folding to make sure no flour lumps are left
Pour the batter on prepared baking pan, spread out evenly
Bake 15-20 minutes or until light golden color
Note* This kind of Swiss roll is time sensitive, you’ll need to roll it while it’s still hot, so be sure to prepare and have everything on hand
Use a knife to slide around the sides, making sure nothing is stuck to the pan
Lightly sprinkle with some of the confectioners sugar
Place a wax paper and cooling rack on top of the cake and turn it upside down
Remove the parchment paper from the back of the cake
Using a pizza cutter, or a knife carefully and thinly cut all four sides of the cake
That will prevent the roll from cracking
Quickly spread the jam while it’s still warm and roll, refer to YouTube tutorial for more details
Allow to set 15-20 minutes
Sprinkle with the remaining confectioners sugar on top of the Swiss roll
Slice and enjoy!
