Tomato Omelette
This quick and easy tomato omelette is one of my favorite lunch dishes. Yes, even though it’s an omelette, Armenians have this dish for lunch or even for dinner. Everyone makes their tomato omelette slightly different but I’m sure the final taste is the same : delicious. A variety of greens can be added to this dish, but basil is that “must” green you would want to have in this tomato omelette. You can make it spicy or not, so choose either bell peppers or green chili peppers. Additionally, I like adding some sliced heirloom tomatoes to give the dish color and extra flavor, and of course topping it with extra fresh green or purple basil is a good idea. Also be sure not to overcook the dish, not to drain all that delicious juice from tomatoes.You need to have that deliciousness to dip your soft bread in and to enjoy the dish in proper Armenian manner:)

Ingredients
You will need 2 bowls fill one with boiling hot and the other with ice cold water
5-6 medium tomatoes , preferably very ripe, soft (or you can use 2 cans of diced tomatoes )
7-9 small heirloom tomatoes, sliced in half ( optional)
2-3 tbs olive oil
2 tbs butter
1 medium onion
1 green pepper, chili or bell pepper
1-2 tbs chopped parsley
2-3 tbs chopped basil
½ tsp ground black pepper
Salt to taste
1-2 large eggs, optionally you can add a few quail eggs
Directions for Tomato Omelette
For easy tomato peeling use following steps
Using a sharp knife make cross cuts on top of the tomato, remove the core and place in hot water 1-2 minutes
Remove from hot water and place in cold water, 1-2 minutes
Peel the tomatoes and slice into small cubes, set aside
Slice the onion very thin, lengthwise, set aside
Slice the green pepper into thin strips, set aside
Chop the greens
Preheat the skillet , add olive oil and onions, sauté 2-3 minutes or until translucent
Add tomatoes, green peppers and allow to simmer over medium heat, about 5-7 minutes,stir a few times
Add the greens, salt ,pepper and stir to combine
Add the butter, stir and as it melt, add the beaten eggs, slightly mix and add the quail eggs
Cover the lid and allow to cook 2-3 minutes
Garnish with freshly chopped basil and enjoy!
