Delicious and flavorful, classic Armenian dish called Urfa kebab, the right word in Armenian will be kololak.

Quite simple in making ,Urfa kebab is a filling ,satisfying gourmet dish that to my opinion needs more recognition.

Ingredients

Urfa Kebab Recipe




6-7 medium size eggplants

1 ½ cups oil for frying ( I use olive oil)

Salt to taste

About 6-7 tablespoon tomato sauce,plus same amount of salsa ( optional)

6-8 cloves of garlic

Green or red pepper, sliced or whole

Fresh greens to garnish the dish when it’s cooked  (optional)

For the meatballs

2 ½ -3 lbs fresh ground meat, I mix turkey and beef

1 medium onion, finely grated ,1 tsp ground black pepper

1 tsp paprika

½ tsp. cayenne or crushed red chili flakes

Dried herbs, such as parsley, basil, dill , about 1-2 tbs

1 ½ tsp garlic salt, or you can grate a garlic clove

Salt to taste

You will also need a 12” round baking pan , on 9”x13” pan

Wash and cut the eggplants into 1 ½” to 2” thick circles

Fry in preheated oil until golden color on each side

Lightly salt and set aside on a paper towel

Making the meatballs

In a large bowl combine together all the ingredients for the meatballs

Mix until incorporated

Using a medium ice cream scoop make meatballs

At this point you can preheat the oven to 375° F

Drizzle the baking pan with half of the tomato sauce and salsa

Arrange the meatballs and eggplants in a baking pan by simply placing those side by side in pattern

Drizzle with the remaining of sauce and salsa

Place garlic cloves,sliced red /green peppers on top of the assembled dish

Cover with foil and bake covered for 40 minutes

Raise the oven temperature to 400° and bake 20-25 minutes uncovered

Allow the dish to set 10 -15 minutes before serving

Garnish with fresh greens to your taste

1 կգ աղացած միս, ես խառնում տավար հնդկահավ

5- 6 հատ միջին չափի սմբուկ, բուսական յուղ տապակելու համար

1 գլուխ սոխ, չափը ձեր ցանկությամբ

0.5 բ տոմատի սոուս

1 բ լեչո

Թարմ պղպեղ, 2- 3 հատ

Հաեմունքներ; կարմիր, սև տաքդեղ, քեմոն, կորիանդեր, սխտորի փոշին կամ թարմը, չոր կամ թարմ կանաչեղեն

Եփել 200°С նախապես տաքացված ջեռոցում , 45- 55 րոպե փակված , 15- 20 րոպե բաց,կարող եք մսի եփվածությունն ստուգել նախքան ջեռոցից հանելը
