Vinegar Potato Salad
Just remembered about my mom’s simple vinegar potato salad. A salad that everyone probably makes differently, with more or less ingredients various spices.
And I’m pretty sure this vinegar potato salad is never made by a precise recipe.
I’ll share my own version of this comfort meal, let’s hope you’ll try and enjoy it!

Ingredients
5-6 medium red potatoes, cook with skin on, cubed
1 medium red onion, sliced thinly into semicircles
Freshly chopped herbs: parsley, cilantro about 2 tbs each
A few strands of fresh thyme, or 1 tsp dry herb
Dressing
1 ½ -2 tbs balsamic vinegar , add more or less to taste
2-3 tbs olive oil
2 garlic cloves, minced, ½ tsp ground cumin
⅓ tsp ground black pepper, ¼ tsp cayenne
⅓ tsp curry powder
Salt to taste
Directions
Combine all ingredients in a deep salad bowl
Mix dressing ingredients in a small jar, stir well to incorporate
Pour over the rest of ingredients, toss and set aside to marinate, about 30-40 minutes
