Zucchini Ground Beef Dish Recipe
Incredibly delicious and easy to make zucchini ground beef dish .
A great dinner dish recipe shared by the lovely and talented pianist , a good friend Tsoline Hajian .
The dish is served with a side of rice or bulgur pilaf and fresh mixed green salad.

Ingredients
5-6 medium zucchini , cubed
1 lbs ground beef (20%fat 80% lean)
You can use any of you favorite meats, (vegetarians can use mushrooms or eggplants instead )
1 large or 2 small (16 oz) crushed tomatoes or 3-4 fresh tomatoes, cut into small pieces
1 medium onion , finely chopped
1-2 garlic cloves, minced
2-3 tbs butter or vegetable oil, I didn’t use any as the meat had enough fat
Spices and seasonings: salt, black pepper, allspice, Aleppo pepper, dried mint
Fresh parsley
Directions
Preheat a saucepan , add the meat and cook until the liquid evaporates
Add onions and cook another 3-4 minutes or until onions are translucent and the mixture starts to brown
Add tomatoes , spices, garlic and mint, cook another 3-5 minutes
Stir in zucchini, cover the lid and cook over medium to low heat 25-35 minutes or until zucchini is cooked to your preference
Serve the dish with a side of rice or bulgur pilaf and freshly mixed greens salad
