Blueberry Cupcake Muffins Recipe
Ingredients:
1 Cup sour cream (or plain yogurt)
1 Egg ,lightly beaten
⅓ Cup vegetable oil (or melted butter)
1 Tbs fresh lemon juice
1 Tsp lemon zest
2 Cups all purpose flour
1 ½ Tsp baking powder
1 Tsp baking soda
1 Cup granulated sugar
¼ Tsp salt
1 Cup fresh or frozen blueberries
(do not thaw frozen berries before adding them to butter)
Ingredients for topping:
Mix 2 tbs melted unsalted butter + 2 tbs sugar +2 tbs flour +1 tsp lemon zest
Directions:
In a bowl combine together:flour,sugar,baking powder,soda,salt and mix lightly
Add washed drained berries and gently mix with spatula,try not to smash them
In another bowl combine:egg,sour cream,oil,lemon juice ,zest and mix with spoon
Slowly add liquid ingredients into flour/berry mixture and fold with spatula gently
You don’t need to use electric mixer for this recipe
Preheat oven to 375F
Line 12 muffin cups with paper ( or butter them)
Spoon the butter into cups and sprinkle with topping
Bake 20-25 minutes
