Ker u Sus Recipe
An Armenian comfort dish made with fried beef skirt steak and potatoes. The dish is called “ Կեր ու սուս / Eat and don’t talk”. The name came from the fact that it very spicy dish, meaning that it’s so spicy that after you take a bite , you are unable to talk. Well, this doesn’t mean you really have to follow that rule and make it very hot and spicy, since many may have different taste preferences, reasons not to eat very spicy meal etc… This dish tastes very delicious even without too much spiciness.
Originally it is made with beef tenderloin, sliced into bite size pieces, cooked and then fried with onions and the rest of the ingredients, I decided to make mine with beef skirt steak since it’s a tender meat itself and no need to pre cook it before frying.

1 lbs skirt steak, finely sliced into half inch strips
1 large onion, sliced into thin semi circles
2-3 tbs olive oil
1-2 cloves of garlic, minced
1-2 green chili peppers, or use bell peppers if you don’t want it too spicy, finely chopped
1 can of green peas, washed, drained ( optional)
2-3 tbs finely chopped parsley or cilantro
4-5 medium potatoes, sliced into half inch strips, I used young white potatoes + oil for frying
Salt pepper to taste
Preheat a large skillet , add olive oil and onions, sauté until tender
Add the meat, peppers, garlic and cook on medium to low heat , 15-20 minutes
While that’s cooking fry the potatoes, add salt after done
The meat should be cooked and ready by that time
Add parsley /cilantro , green peas and toss
Add potatoes, mix and cook another 2-4 minutes, do not over mix
Ker u Sus is ready
Serve over fresh tomatoes
