I hope many of you have missed my healthy, delicious, quick and easy salads.
This lentil carrots salad is one of my absolute favorites . It’s so flavorful, most importantly quick to make, requires no special skills nor ingredients.
I’m sure many of you will try and hopefully ove this amazingly delicious, healthy salad. Quick and easy recipe follows.

1 cup of lentils soaked in warm water
2 medium carrots , finely grated
1 jalapeño , remove the seeds if you don’t like it spicy
4-6 scallions
Some parsley or cilantro
For the dressing
3 tbs olive oil
1 tbs apple cider vinegar or lemon juice
⅓ tsp ground black pepper
⅓ paprika
½ tsp cumin
½ tsp turmeric
¼ tsp chili pepper
1-2 garlic cloves
½ tsp grated fresh ginger
Salt to taste
Directions
Start cooking the lentils.
Cook about 7-10 minutes, or until they’re fully cooked. Add some salt.
While that’s cooking, prepare the dressing by combining all ingredients and mixing to incorporate.
Slice, grate, chop and prep herbs, veggies. Set those aside.
Drain cooked lentils, add the rest of ingredients, toss and enjoy!
