Comfort food at its finest: Armenian yogurt soup Spas.

This simple dish has a great, tangy and creamy taste. It can be served as refreshing, cold soup for summertime or hot and heartwarming comfort soup in cold season. Very few ingredients are needed to make this truly delicious Armenian yogurt soup Spas.

This soup can be made with rice or peeled wheat, both versions of the soup are equally tasty.

The key to having a smooth and creamy Spas is taking time and stir it constantly until it boils.

This recipe will reduce the time of stirring as the soup is being made with boiling water and half cooked wheat.

Ingredients

2 cups of plain yogurt (or a small jar 16 oz strained yogurt)

1 egg

1 tbs all purpose flour 

1/2 cup wheat groats (or rice), soaked in hot water for 30 min

5-6 cups of boiling water

20-50 grams of unsalted butter or vegetable 

3-5 sticks of scallions (green onions)

3-4 tbs fresh cilantro, chopped (or mint ,dry or fresh)

Salt to taste

Directions

Wash and drain wheat groats , soak in boiled water for about minutes, drain, and set aside 

In a large pot combine: yogurt, flour, egg and whisk until smooth, without any lumps

Add the wheat, mix and slowly start pouring hot water, stir continually while adding the water.

Start cooking on high heat, while stirring constantly 

As it boils, reduce the heat and allow to simmer 7-10 minutes or until the wheat is fully cooked and tender.

While the soup is simmering, prepare the butter and onions by simply sautéing the onions 

Pour the browned butter and onion mixture in the soup

Add the salt for taste 

Serve with freshly chopped cilantro (dry or fresh mint)

5-6 բ եռման ջուր

⅓ բ ձավար ( նախապես եռման ջրի մեջ թրջել)

Թարմ համեմ կամ չորեցրած անանուխ

2ст (500мл) мацун , можно добавить 2-3 ст л сметаны 

1 яйцо (я не добавила)

1 ст л муки

4-5 ст тёплой воды

0.5 ст пшеницы, заранее замочите в горячей воде. Можно и с рисом, но рис не надо замачивать 

Для зажарки

20-30 г сл масло (я беру растительное масло)

Зелёный лук 

Можно добавить сушеную мяту 

Свежая кинза 

Соль по вкусу
