Lentil Salad with Feta Recipe
From my super easy and healthy recipes menu: lentil salad with feta, those who chose vegan lifestyle, can skip the feta, this salad will still taste amazing.
This is the food I’d eat everyday and never get tired. This is something you can improvise, use your imagination and play with spices and ingredients.
I like to keep my lentil salad quite simple, using minimum amount of spices. I’ll share the recipe, but keep in mind that good food is about result of a bright imagination and go from there

Ingredients
1 cup large green lentils, wet in cold water 3-4 hours or overnight
Boiling hot water for cooking the lentils
1 small onion, finely chopped
1 garlic clove, minced
2-3 tbs olive oil
Handful of red cherry tomatoes,about 8-10 oz, sliced
1 medium lemon, zest and juice
½ tsp ground black pepper
⅓ tsp ground cumin
Fresh herbs: parsley, basil, dill or cilantro, anything on hand or to your taste
Feta cheese for sprinkling the salad before serving refer to YouTube tutorial for more details
Chopped romaine lettuce (optional)
Salt to taste
Directions
Start by cooking the lentils
In a large pot combine wet lentils, salt and boiling hot water
Cook the lentils only 2-4 minutes, after it comes to a boil
Drain the water and place in a bowl , allow to cool down slightly
In a smaller bowl combine all the spices, garlic, oil and lemon juice /zest, mix , the dressing is ready
Add the tomatoes, onions and dressing to lentils, toss
Add chopped herbs and serve over lettuce
