Quinoa Chickpea Lettuce Wraps Recipe
Quick list of ingredients and instructions for making the most delicious and healthy lettuce wraps with quinoa and chickpeas.

Ingredients
1 can chickpeas
⅔ cup quinoa, cooked , simply wash , add enough cold water to cover the grains completely, bring to a boil, cover the lid and simmer on low heat 5-7 minutes
1 small onion
2-3 tbs olive oil
¼ cup salsa or tomato sauce
1 tbs red pepper paste
1 tbs tahini paste
1-2 garlic cloves, minced
1 small fennel , finely chopped
Freshly chopped herbs: dill, parsley, cilantro or basil
The juice of 1 large lemon or 2-3 limes
Spice and season to taste:
Salt, black and red pepper, cumin, turmeric and ground coriander
Use butter or Romaine lettuce for wraps
Directions
Sauté onions until translucent
Stir in chopped fennel and cook 2-3 minutes
Add salsa and red pepper paste and cook 2-3 more minutes
Add the rest of ingredients and spices, mix and cook 1-2 minutes
Remove from the heat and add chopped herbs
Enjoy warm or cold, wrapped with lettuce, pita or tortilla bread
