Mixed Veggie Soup Recipe
The best mixed veggie soup made by quick improvise. Every time I empty out my fridge , something delicious happens.
This time I ended up making a super simple veggie soup with everything I found in the fridge.
It’s packed with good amount of greens veggies and why not , you can always add some of your favorites, even better.
Meat lovers can make this same soup with chicken or beef broth and added chunks of cooked meats.

Ingredients
2-3 zucchini, cut into semicircle
1 small onion, finely chopped
1 large potato , cut into cubes
2-3 tbs olive or vegetable oil, I used grape seed oil
About one pound of green beans cut into bite size pieces
½ lbs asparagus cut into bite size
1 large carrot shredded or cut into small pieces
1-2 garlic cloves , minced
1 tbs red pepper paste
1 cup crushed tomatoes or ½ cup tomato sauce
Use any of your favorite herbs, fresh or dried , I used fresh dill , cilantro and dried basil
Spices : red and black peppers, turmeric, coriander and salt
You will need about 5-6 cups of hot water
Directions
Start by cooking the beans and potatoes
While those are cooking, sauté the onion until translucent
Add in zucchini and carrots , cook 2-3 minutes
Add crushed tomatoes and red pepper paste, garlic and mix to incorporate , cook together 2-3 minutes
Add asparagus and all the spices except for the salt, stop cooking at this point, you don’t want to overcook the asparagus
Pour all this cooked and spiced mixture into beans and potatoes pot
Stir , add the salt and cook 3-4 minutes
Turn off the heat and add fresh herbs, if adding dried , be sure to add earlier
Cover the lid and let the soup to set
Enjoy with a squeeze of fresh lemon juice or as is
