Okra Tomato Stew Recipe
Delicious and nutritious okra tomato stew from Armenian cuisine.
A slight change to the dish is made when added zucchini and a number of non traditional spices .

Ingredients
1 large onion, finely chopped
2-3 tbs olive oil
1 ½ lbs fresh okra, washed stems removed
3-4 medium tomatoes, crashed
3-4 garlic cloves
2 medium zucchini, cut into 1” thick circles
Freshly chopped herbs: dill, parsley, cilantro
Spices and seasonings : salt, black pepper, Aleppo pepper, ground allspice, curry, coriander
Directions
Sauté onions with olive oil , until translucent
Add in crashed tomatoes and cook about 2-3 minutes
Stir in zucchini and okra , cook covered 5-7 minutes
Spice , season and allow to cook another 3-4 minutes
Sprinkle fresh herbs, and let the stew set covered about 10-15 minutes , stir and enjoy
