Festive , unique,bright and most importantly healthy Tavush Ghapama from Armenian cuisine . This dish will certainly be one of the best additions to your thanksgiving menu. My followers may recall another Ghapama recipe that I presented last year during this time. As to say during pumpkin season. Ghapama is basically a stuffed pumpkin . Many different Armenia regions make their own variation. The most well known Armenian Ghapama is made of rice, dried fruits, nuts , honey , cinnamon and clarified butter. Sweet and savory dish that can surprise anyone with its deliciousness. I remember getting so many messages and emails last year , people who tried Ghapama for very first time and absolutely loved it .

Ingredients 

Tavush Ghapama Recipe - Armenian Cuisine

1 small pumpkin , cut the top remove the seeds , save the “brains”

1-2 large onions , finely chopped

2-3 tbs vegetable oil

¾ cup chopped walnuts

⅔ cup dried cornelian cherries or unsweetened dried cranberries

⅓ tsp cinnamon

Salt to taste

Honey, optional

Directions

Start by preparing the pumpkin

Wash, cut the top of the pumpkin , remove the seeds , save brains

Sauté onions with oil until light golden color

Add in the nuts, pumpkin brains, dried cornelian cherries and brains




Cook everything 2-3 minutes

Add the salt , go very light on salt

Add cinnamon , mix

Stuffing is ready

Preheat the oven to 350°F

Stuff the pumpkin, cover the lid and bake 40-50 minutes or until it’s cooked

To check the readiness : stick the knife into pumpkin, if it goes in smoothly, means it’s cooked

Allow Ghapama to set 5-7 minutes

Slice and enjoy with a drizzle of honey or as is
