Tomato Rice Pilaf Recipe
I’m happy to share my grandma Marusya’s tomato rice pilaf recipe and hope many will try and enjoy it.
Ingredients
3 medium fresh tomatoes, peeled, chopped
2-3 tbs vegetable oil
1 ½ cups jasmine or calrose rice, washed , strained
About 1 cup boiling hot water, or as much as you need to cover the rice completely and just a bit more
Salt to taste , if you like to add your favorite spices , go for it
Combine tomatoes and oil in a saucepan over medium heat and cook a 2-3 minutes
Add the rice and stir another 2-3 minutes
Pour boiling water , add salt to taste and cover the lid
Reduce the heat to low and cook 7-10 minutes
Remove from the heat and allow to set 5-10 minutes
Fluff and serve
