Truffle Cookies
From childhood sweets : truffle cookies , buttery, crumbly, chocolaty, covered with a thick layer of cocoa and powdered sugar mix. Super easy to make and very yummy .
Made a few slight changes to the original recipe to flavor the cookies a bit more. Added toasted ground hazelnuts, starch and baking powder. If you want to use the original version simply skip those ingredients .

Ingredients
1 cup ( 2 sticks/ 226 grams) unsalted butter, at room temperature
2 tbs sugar
1 medium egg, at room temperature
1 tsp vanilla extract
½ cup toasted hazelnuts + 1 tbs cornstarch, pulse in processor until fine crumbs formed
1 tbs hot water
2 cups + 2 tbs all purpose flour
1 tsp baking powder
Pinch of salt
You will also need ⅔ cup powdered sugar + ¼ cup cocoa powder sifted together
Directions
Preheat the oven to 375°F/ 180° C degrees
Start by grinding the hazelnuts + starch in a food processor , set aside
In a separate bowl combine : flour, salt and baking powder
In a mixing bowl on high speed beat the butter and sugar until pale color
Lower the speed and beat in the egg , vanilla extract ,ground hazelnuts
Beat in the dry ingredients in 3 -4 additions ,add the hot water after 3rd addition
Do not overbeat
Using a small ice cream scoop or a teaspoon , form pyramids or balls
Bake on a lined cookie sheet , about 15-17 minutes or until the tops are light gold color
Remove from the oven and tumble in cocoa-sugar mix while the cookies are hot
Let cool down and enjoy!
