This is one of my favorite cookie recipes that I happened to “invent” because I wanted something sweet after my dinner. My parents came home and saw my cookies, and my mom fell in love with them so I decided to take exact measurements of everything and share it with you guys too!
Ingredients:
1/3 cup packed brown sugar
1/3 cup coconut sugar (or cane sugar)
A dash of Chocolate flavoring (optional)
1 tsp baking soda
1 tsp baking powder
1 1/2 cups flour
1 cup of shredded coconut
1/4 cup of coconut oil
Dash of vanilla
Dash of almond milk
Directions:
Set your oven to 350°F.
Combine the sugar, chocolate flavoring, coconut oil, almond milk, and vanilla and let it mix well together.
Once this is combined, add your coconut shreds and let it mix for a little bit longer.
Once the mixture is well incorporated, add in the flour, baking soda, and baking powder.
Use a spoon or ball up the mixture and place onto a baking sheet.
Let your cookies bake for about 18 minutes or until golden brown, and enjoy!
