Quite simple and  incredibly delicious, moist, fluffy white chocolate and raspberry muffins.

Another on of my favorites, yes , I have an endless list of favorite desserts and admit that proudly. I keep saying that homemade sweets have 50% less calories and that saves me on further explanations ,why I bake so often:) What can I add to describe these muffins , should be obvious: if you put chocolates and raspberries in one recipe ,expect the good things to happen.

White Chocolate and Raspberry Muffins

 

Ingredients

2  Cups of all purpose flour

⅔   Cup granulated sugar

¼ Teaspoon salt

2 Teaspoon baking powder

1 Teaspoon vanilla extract

1 Tablespoon lemon zest

1 Cup washed, drained fresh raspberries

⅔  Cup white chocolate chips (morsels)

100 Grams of cold unsalted butter , cubed

1 Egg ,beaten

½ Cup heavy cream (or full fat milk)

For topping

¼ Cup firmly packed light brown sugar

¼ Cup flour

2 Tbs cold butter sliced

½ Tsp cinnamon (optional)

Just mix all these ingredients together with a fork and set aside

Directions

Preheat oven to 375°

In a bowl combine:flour,sugar,salt,baking powder,lemon zest and mix to combine

Add sliced cold butter and mix using pastry blender ,or 2 forks,or your fingertips

The mixture should be coarse crumbs

Add raspberries and toss gently to combine

In a separate bowl mix together milk ,vanilla and egg, add to flour mixture and stir until the dough forms

Do not over mix

Spoon the dough into prepared,lined muffin tins

Sprinkle with prepared topping

Bake about 20-25 minutes or until golden color
