Baked Fish Mixed Veggies Recipe


Very quick, healthy and most importantly delicious dinner dish idea made with baked fish and mixed veggies , served with a side of couscous .

I’ll list a quick list of ingredients and hope many will try and love it.

Baked Fish Mixed Veggies - Dinner Dish Idea

Ingredients 

About a pound of fresh fish fillet, I used salmon, tuna and yellowtail , cut into cubes

2 medium zucchini, cut into circles

5-7 Brussels sprouts, halved

Handful of cherry tomatoes

4-5 garlic cloves

1 jalapeño, cut

1 lemon, sliced into circles

Half a branch of fresh or 4 tbs dried tarragon

2-3 tbs olive oil or butter

Salt, pepper, cumin, turmeric, paprika or cayenne to taste

Directions

Preheat the oven to 450°-480° F degrees

Drizzle a 9” pie pan with half of olive oil

Next add tarragon, zucchini, Brussel sprouts, garlic and spice, season to taste




Add cubed fish fillet , tomatoes, sliced lemon and the rest of olive oil, spice and season to taste

Cover with foil and bake about 25-30 minutes,

Remove the foil , turn the heat up to 500°F or broil to lightly roast the top, this step is optional

Remove from the over and allow to set covered , about 15-20 minutes

Serve with a side of couscous, I cooked mine according to box instructions
