Buttercrunch Brittle Recipe
Classic buttercrunch brittle , one of children’s favorite sweets. I don’t make it very often as it’s almost addictive and runs out very quickly.
Hope many will give it a try but don’t get too attracted.
Ingredients
1 ¼ cups light brown sugar, firmly packed
2 tbs water
1 tbs light corn syrup
¼ tsp salt
¼ tsp baking soda
1 stick (113 g) unsalted butter
1 tsp vanilla extract
2 cups toasted , finely chopped almonds
6 oz (170 g) semisweet chocolate chips
You will need a candy thermometer
Directions
Start by preparing the pan
Spray 10”x8” pan with oil and spread half of the almonds
In a heavy bottom saucepan combine:sugar, water, corn syrup and salt
Bring to a boil and stir occasionally
As it boils cover the lid and allow to cook 2-3 minutes, this will help the steam to wash off the sides of the pan and prevent cristallisation
Open the lid, attach candy termometer and cook until it reaches to 285° F / 140°C
Remove from the heat and mix in: soda , vanilla extract and butter
Stir to incorporate and pour over the prepared pan with almonds
While the brittle is hot, sprinkle the chocolates and allow 2-3 minutes to melt
Using an offset spatula spread the melted chocolate over brittle and sprinkle with remaining almonds
Let it come to room temperature and place in the fridge for 10-15 minutes
Cut and enjoy
You can store it in an airtight container up to 10 days
