Crispy Lentil Patties Kebabs Recipe

Recipe 

2 cups red lentils (wash and soak for 1 or more hours, in cold water)

1 large onion (finely shredded or chopped )

2 garlic cloves (minced)

1 large potato ( shredded)

2 carrots (shredded)

1 medium zucchini (shredded )

½ cup bread crumbs 

2 tbs red pepper paste

1 tbs bs harissa (optional) 

2 tbs olive oil for frying shredded vegetables plus a few more tablespoons for brushing the patties before baking 

Salt to taste 

½ tsp curry

½ tsp coriander 

1 tsp black pepper 

1 tsp turmeric 

1 tsp cumin

¼ tsp cayenne pepper 

1 tbs sumac ( or 1-2 tbs lemon juice) 

1 tbs dried mint 

Bake 20-25 minutes at 425° F preheated oven 

You can also fry these in very little oil
