Mshosh Recipe
Classic lent dish from Armenian cuisine called Mshosh, means apricot.
A simple, few ingredient appetizer, made with cooked lentils, dried apricots, plums , walnuts and sautéed onions.
So simple yet so uniquely delicious. There are a few variations of Mshosh, made with addition of pumpkin or green beans.
I’ll be happy to share those in the future. For now let’s try the classic Mshosh from the cuisine of Van, an Armenian region.

Ingredients
1-1 ½ cups green lentils
Enough hot water to cover lentils entirely while cooking
1 medium onion, finely chopped
3-4 tbs olive oil
¾ cup dried apricots , sliced or whole
¾ cup dried plums, chopped
⅔ cup chopped walnuts
1-2 tbs fresh parsley, chopped
Salt, red and black pepper to taste
Directions
In a saucepan combine lentils and hot water, bring to a boil and cook until cooked
In a skillet sauté onions with olive oil, until golden color
Stir in dried fruits and cook 2-3 minutes
Pour over cooked lentils, spice and season to taste
Sprinkle with fresh parsley and enjoy
Mshosh can be served warm or cold
