Spelt and Leeks Pilaf Recipe
Simply delicious and super easy to make spelt pilaf with sautéed onions and leeks.
Spiced seasoned and served with freshly squeezed lemon juice.

Ingredients
2-3 fresh leeks, washed chopped to half inch circles
1 medium brown onion, finely chopped
3-4 tbs olive oil
2-3 medium size fresh tomatoes, skin peeled and finely chopped or 3-4 tbs tomato sauce
2-3 garlic cloves (optional)
2 cups cracked spelt, I wet mine in hot water for about an hour
Salt, black pepper and cumin to taste
3-4 cups of boiling hot water
Fresh lemon juice
