Banana Cookies Recipe
Sweet memories from childhood:soft and delicious banana cookies .
These were probably the most creative cookies back in 80’s , when we were kids.
Bananas happened to be one hard to find fruit ,exotic , not sold in regular supermarkets .
This is when creativity of moms , who couldn’t afford or even find the fruit , came to rescue.
They came up with banana shaped cookies to imitate the fruit.
Everyone was in love with these cookies, up until now they bring up so many sweet memories .

Ingredients
Cookie dough
(This recipe makes 12 cookies, double the recipe if needed)
1 stick (113g) unsalted butter at room temperature
1 large egg
½ cup sour cream
1 tsp vanilla extract
2 tbs sugar
½ tsp baking soda (if doubling the recipe don’t double soda)
½ tsp baking powder
Pinch of salt
1 ½ -2 cups flour , or enough to knead a soft non sticky dough
Yellow food dye , optional
Cookie Filling
Original
½ cup unsalted, fat free farmers cheese
2-3 tbs sugar , taste for sweetness
¼ tsp ground cinnamon
Combine everything together, mix to incorporate, filling is ready !
Banana version
⅓ cup farmers cheese
Half of a medium banana, corsley mushed
2-3 tbs sugar , taste for more sweetness
Powdered sugar for dusting the cookies
Directions
To make cookies dough
Preheat the oven to 350°F degrees
Combine all ingredients and knead into soft non sticky dough
Divide into 12 even sized balls
Tap and form an oval shape
Spoon about 1 tsp of the filling onto the center , pinch the sides to form an elongated shape
Fold , pinch the ends to give it banana shape

Bake on a lined baking pan 15-18 minutes or until the sides are like the golden color
Allow to cool down completely
Dust with powdered sugar and enjoy!
