Tacats Kololak in a Pan
Modern presentation of a traditional Armenian dish tacats kololak .
Which is basically a very well blended or beaten meat tenderloin, in my version I used ground turkey , spiced with a few ingredients and onion.
The idea of this dish was sent to me by one my YouTube followers Arusyak Atayan.
Hope you’ll give this incredibly delicious and easy dish a try and love it.
Ingredients
1-1 ½ lbs ground turkey breast
1 egg
1 cold water
¼ cup of vodka
1 tbs all purpose flour
1 small onion
½ tsp garlic powder
¼ tsp ground black pepper
1 tsp paprika
1/2 tsp red chili flakes ( cayenne can be added for spiciness, optional)
Salt to taste
You will also need 12-14 oz white or portobello mushrooms, sliced
8-12 oz shredded mozzarella or any soft and creamy cheese
1 tbs mayo , optional
1 tbs oil or butter for greasing the pan
Directions
Preheat the oven to 420°F degrees
In a food processor combine sliced onion, egg, vodka and half cup of water , process until it turns into a smooth mixture
Add in the meat , spices and the remaining water
Continue blending until the mixture is smooth and shiny, about 7-10 minutes
For better taste , allow the mixture to marinate in fridge 45-60 minutes
Next step
Generously grease a 9” cake pan with oil
Spread the mixture evenly
Top with mushrooms and shredded cheese
Drizzle with mayo and bake 40-45 minutes
